"DATE: 1-13-05 Appearance: Deep ruby.
Nose: Sweet and spicy oak, ripe peppers, black cherry, raspberry, rich, "sweet".
Palate: Dry with good acidity. Midweight plus, good body for cab franc. Rich ripe tannins, blackberry, raspberry, some cassis, pepper, spicy oak. Rich midpalate, rich mouthfeel, long clean finish.
Conclusions: Quickly becoming the standard for affordable excellent cabernet franc in Ontario. This is a wine that would rarely be out of place, and is capable of aging at least another 5 years. Best 2007 - 2010." lfw

Man that's one big bottle!!FOOD MATCHES: Chef Franklin said "Rose petals - maybe flower shop, peppers and just crushed peppercorn. For rack roasts of beef, well trimmed slow roasted lamb leg with olives and herbs or even braised shank. Powerful and pleasurable without overwhelming. Best for aged strip loin grilled to slightly past rare served with ragout of forest mushrooms."

FROM THE PRODUCERS:"Rich, expressive fruit, dark berry and light cedar with good length and soft tannins on the finish. Match with sharp cheddar, Roquefort cheeses, grilled mushrooms in garlic, vegetarian lasagne, roasted turkey, grilled game beef or lamb."
