wine chemistry at work Tech Information: 03-17-07 $ 23.95 (S: 0 A: 13) Winery

"DATE: 03-23-07 Appearance: Deep ruby.
Nose: Spicy oak, cassis, black fruit, bits of chocolate and spice.
Palate: Dry with good acidity, midweight plus. Lovely initial sweet fruit is followed by a drying out by dusty tannins midpalate and through a long dry clean finish. Nicely balanced wine.
Conclusions: Great now with rare meats, but this will turn into a complex stand-alone wine in five years then last another seven." lfw

FROM THE PRODUCERS:"A deeply coloured wine with a complexity of aromas, including intertwining notes of spice, blackberry and cocoa that will evolve with cellaring.

Food Pairings: Roasted leg of lamb, filet mignon with wild mushrooms, strong cheeses.

Drink or Hold: Can be enjoyed now, but may be matured by further cellaring, depending on individual preference. Ageability: 3-7 years."
